Up Your Snack Game! | Protein Granola 'Apple Nachos'

Evening my lil chickpeas.

 Let's talk snacks for a lil meat-free Monday goodness. You know I love them. Uh-uh.

One question I do get asked quite a lot is all about what are the best 'healthy' snacks to opt for? What can I do to tide me over between meals? What do you snack on?

Now You know. Holli is the worlds biggest nut butter lover. One of my favourite snacks is by far the traditional apple and peanut butter. If you ain't tried it, are you mad?! Where as I cannot beat that classic, I thought I'd spice it up a bit for you lot looking for a new snack idea.....


These apple nachos are the perfect healthy snack or sweet treat which can be whipped up in just a few minutes. Anyone can love them and it's especially good for kids when wanting to jazz up fruit! All you need is some apples, nut butter of preference (almond  butter is the best!), granola and any other toppings of choice such as nuts, chocolate chips, chocolate drizzle, coconut flakes you name it! It's great how versatile you can be and make these a complete personal preference!

 I mean by all means, go crazzzzyyyy.

Specifically in this recipe I wanted to create a new granola recipe which I have also added below. This is a protein vanilla, coconut and buckwheat granola! Packed with lots of good bit's and bobs such as oats which are a great energy source, buckwheat groats which has a higher amino acid profile that other grains, coconut to add a lil sweetness, chia seeds for a boost in healthy fats and omega 3's, cinnamon for a boost in metabolism, coconut sugar adding a slightly caramel flavour and of course the added protein powder for a boost in flavour along with protein! Yup it's kinda to ultimate granola. AND tastes amazzzzing.

I've made a lot of granola but this has to be my favourite.

Anyway back to the nacho's. I guess it's just apples with toppings... however apple nachos sounds wayyy more exciting. It's basically pimping up the apple and nut butter snack completely! We never do things boring here ey...

This is a great way to get your apple a day while also satisfying your sweet tooth. It's got fruit, good carbohydrates, protein, healthy fats, sweetness and goodness all in one!

These are so so addicting, a great way for kiddies to get their daily fruit intake and I'm sure will be a huge hit for you and your family... (if you dare to share)

Protein Granola 

2 cups of oats

1 cup buckwheat groats 
1/2 cup desiccated coconut 
1/4 cup chia seeds 
4 tbsp coconut oil
2 tbsp maple syrup 
2 tbsp coconut sugar 
1 scoop Vanilla Protein powder (I used MissFits Nutrition Vegan blend)
1 tsp cinnamon 
Pinch of salt

Pre-heat your oven to 160c. Line two baking trays with baking paper.

In a large mixing bowl place the oats, buckwheat, desiccated coconut, chia seeds, cinnamon, coconut sugar, protein powder and salt. Mix together. 

Then melt your coconut oil and place into the bowl with the maple syrup. Mix well making sure you cover all your dry ingredients with the wet.  

Spread your granola mix evenly over the two baking trays and bake for 30-40 minutes until golden brown. Make sure to stir around your granola ever 5 minutes or so to prevent it from burning. Remove from the oven and leave to fully cool!

The Apple Nachos

 Apples (pink ladies are my favourite!)
 1 tsp lemon juice 
  Runny peanut butter (or nut butter of choice)
  Protein granola (Or alternative) 
Any other toppings such as cacao nibs, chopped nuts, seeds, goji berries, chia seeds etc. 

Slice up your apples into equal thin slices. Cover your apple slices in the lemon juice (this helps them to stop browning so fast) 

Then arrange your apple slices around on a large plate. Drizzle the peanut butter evenly over the apples. Sprinkle with the granola. Feel free to mix up your toppings drizzle with chocolate, chopped dates, cranberries, crushed pecans, granola, goji berries or a sprinkle of cinnamon! 

Serve and enjoy!
