Matcha Mixed Nut Granola

Hey my lil chickpeas! We meet at Monday again, can you believe it? Really how damn fast the weeks are going. I swear I need an extra day in the week most of the time. I mean I'm trying to go with the flow at the moment and accept that life happens but my god I need a few more hours in the day just to get what I want done! Anyone else agree? Yup. 

It's why I appreciate my kitchen times, yep the moments where I can just lose myself in recipes. I can sort of flow away in work that isn't even work. It's pure bliss. I also love it when I have a lil challenge and recently I got sent some product by a Vegan supplement company called Vegavero. They provide a huge range of products for Vegans such as superfoods, sport supplements, vitamins and beauty products. They very kindly sent me a superfood green smoothie mix, their probiotics range (which I'll talk about soon) and some of their Matcha powder. My faaveeeeeee. 

So, lets talk Matcha. The king of this recipe. Originally used with water or milk to create a power green tea. I kindaaa love Matcha lattees, I mean they're a love or hate thing as they have quite a earthy, green tea taste. But using the powder to make a creamy, sweet latte is something I cannot refuse. 

Plus if you didn't know... Matcha has masssiveee nutritional benefits... with over 137 times more antioxidants than your regular green tea! Oh yeaahhhhh! 

Anywayyy, after being sent some cheeky Matcha powder from the guys at Vegavero, I decided it would be good to mix it up with a different way to use matcha. I wanted to create the superfood into somethign that wasn't just a drink.  Andddd you know I love my carbs, oh especially int he form of granola! I didn't really know how Matcha would work with granola but hey why not! and my god was it a goood damn idea! 

Like all granola recipes this is a lil ass easy one! The base is oats and mixed broken nuts which add amazing texture along with a nutty hint to the matcha, perfect! Along with added goji berries or cranberries which add a cute ass pink colour and extra sweetness. Just make sure you add these after you've baked it... I ended up with a bunch of burnt goji's... Holli kitchen dilemmas... 

It's then sweetened with agave syrup but feel free to use maple if you prefer, a lil hint of vanilla extra and then baked until golden and crispy. 

It's perfect when you need and extra delicious, uplifting, crunchy boost. Either drowned in almond milk, sprinkled over some yogurt or taken a handful straight from the jar. 

2 cups rolled oats (gluten free if needed) 
1 cup of roughly chopped mixed nuts 
1/4 cup goji berries or cranberries 
1 tbsp Matcha powder 
1/2 tsp cinnamon 
1/4 tsp salt 
4 tbsp melted coconut oil
1/4 cup agave or maple syrup 
1/2 tsp vanilla extract 

Pre-heat your oven to 160c and line a baking tray with baking paper. 

Place your oats, chopped nuts, matcha, cinnamon and salt into a large bowl and mix together. Add your melted coconut oil, agave syrup and vanilla to the dry ingredients and combine until everything is fully coated. 

Spread the mixture out over your tray and place in the oven for 15 - 20 minutes. Make sure to stir is around ever 5 minutes to avoid any burning. Once done, remove from the oven and leave to cool. Store in a jar/air tight container and enjoy whenever you fancy!
