Green Goddess Bowl with Dijon Mustard Tahini Dressing

Hey my lil chickpeas! I'll admit I'm in a slight blogging rut recently. I can't quite put my finger on it but any ideas just seem to be a lot of tosh. Yup. My head a complete mish of a mash. However I'm trying to bring you still some good content. I have a lil meat-free Monday inspo for you here! You guys asked for some more main meal/savoury ideas, so that's what I'm bringing ya. It can't all be bad then, right?

I mean, this salad is literally one of my to go salads of all time and incredibly versatile. I larrveeeee it. If you're anything like me and love ya greens yet tonnes of flavour then this ones for you. And I have to say anything that involves tahini gets me obsessed... If you haven't tried tahini or a dressing with tahini, what are you doing with your life?

Tahini is by far a staple in my diet! It's a brilliant ingredient to use in so many things, especially dressings. I've tried various tahini dressings but this one really hit the jackpot. A mustard tahini dressing which I have to admit is pretty damn delicious. It's thick and creamy and adds a slightly nutty, bitter, sweet and smoky twist to this salad.

For the salad I combined quinoa which is a protein packed, gluten free grain! I love using quinoa is salads, paired with curries or stews or you can even go sweet with it by using it as a oat alternative in your morning porridge.

Along with the green of course, fresh cucumber (my current obsession), runner beans, fresh spinach and rocket and edamame for some punching protein. I honestly think they're my favourite bean!

I mean you can completely go ahead and mix this whole salad up to however you fancy! Change up the veg, broccoli, courgette or avocado would go great, swap edamame for chickpeas or black beans or add some extra garnishes such as pumpkin seeds, crushed walnuts, flaked almonds etc.

This is also a great recipe for any lunch box/meal prep ideas, it's easy to whip up and take on the go!

Green Goddess Bowl

1/2 cup cooked quinoa 
1/2 cup cooked edamame 
1/2 cucumber chopped into quarters
Handful trimmed runner beans 
Mixed leaves (rocket &spinach) 
Mustard Tahini dressing (below)  
Sprinkle of chia seeds (optional) 

Mustard Tahini dressing 

1 tsp tahini 
1/2 tsp Dijon mustard 
Juice of half a lemon
1/4 tsp cayenne pepper 
Pinch of salt 
Water to thin

To make the dressing place all of the ingredients in a small bowl and mix well. Gradually add water until you reach a desired consistency. 

For the salad, place all of the following ingredients in a large bowl, drizzle with your dressing and an extra squeeze of lemon! Enjoy!
