Blueberry Peanut Butter Flapjacks

Snacks I bloody love them. We know that by now. I'm a full on grazer.

Lets not lie flapjacks are always a winner.

In my eyes they're a great snack or grab-n-go breakfast, filling and hearty! They're also incredibly easy to bake yourself, plus make the house smell amaaaazzing. Bonus!

Plus you can adapt the ingredients to make them healthier than your typical butter and sugar filled flapjack but still taste just as good! Oh yep. These flapjacks are plant based, easy and full of nourishing, energy boosting ingredients to make you and your taste buds jump for joy!

Oats are the base of the recipe packing in carbohydrates and fibre, giving good long lasting energy and a good old moving digestive system. The mix of bananas and agave help naturally sweeten them meaning there is no need for any unrefined sugars. The coconut oil places the butter in this recipe along with the crunchy peanut butter helping everything stick together and packing in healthy fats.

Although these flapjacks are delicious on their own, I had to mix it up and throw in fresh blueberries which work perfect. They burst when baked and spread through creating the perfect sweetness and texture. But you can mix it up if you're feeling daring, go on go crazyyyy maybe add some raspberries, strawberries, dried fruit, or chocolate chips if you're feeling it!

All comes together when baked and creates a comforting, crumbly, sweet, soft bar which melts in your mouth. Trust me when I say you're gonna want to make these! Even if making them were rather dangerous... Didn't even last 2 days... Oppsie!

300g rolled oats 
4 overripe bananas 
4 tbsp crunchy peanut butter
3 tbsp coconut oil 
4  tbsp agave syrup (can use honey if not strictly vegan) 
1/2 tsp vanilla extract 
Pinch of salt 
1 cup fresh blueberries

Pre - heat your oven to 180c and line a baking tray with baking paper . 

Mash your bananas in a small bowl and mash them with a fork. 

In a large bowl place your oats, mashed banana, peanut butter, coconut oil, agave syrup, vanilla and salt. Mix well until combined. Then stir in your blueberries. 

Place the mix into your prepared baking dish. Bake in the oven for 30 - 40 minutes, until golden brown on top. Take your dish out the oven and allow to stand and cool for 10 - 15 minutes, so they continue to set. 

Cut into squares and enjoy!
