Warm Quinoa Tahini Salad

Happy Monday my lil chickpeas!

 You don't really think of salad when Winter hits but what about a warm salad? Hey don't knock it till you've tried it. I know, most of you hear the world salad and assume it's some pesky salad leaves thrown in a bowl with a lil bit of cucumber, tomatoes maybe a bit of bell pepper and that's it. Well you're wrong and in for a treat. This warm quinoa tahini salad is honestly my current fall/winter addiction.

Oh the great quinoa. The one thing no one can ever say, yet one of the heartiest, most nourishing grains of all! I lovvveee quinoa. It's honestly such a versatile grain for salads, side dishes, stir fries, curries, I even love to pop it in some of my bakes... my 'Vanilla & Almond Crunch Quinoa Granola' is one of my favourites... hint hint...

This warm quinoa salad is the perfect balance or flavour, warmth and heartiness. Like a warm comforting hug in a dish.

Mixed in with sweet baby plum tomatoes which go slightly gooey. Oh and it 100% has to be baby plum. Cherry as much as I love them, just aren't the same, trust me on that one. Then the added flavoursome coriander and tangy lemon to add extra kicks and flavours. AND of course the stirred in tahini seals the deal, with it's delicious creaminess and nutty flavours travelling through the entire dish. Honestly, when it;s all thrown together it's complete heaven!

What's also so great about this dish you can literally enjoy it whenever you fancy! On it's own, as a side dish, starter, entree with added roasted chickpeas, hummus and chopped avocado is always a winner! Plus it's great to add any other veggies to, roasted, soft sweet potato, courgettes, broccoli, sprouts, parsnips would all work amazingly. Stir in some chickpeas, baked crispy tofu or whatever the heart desires Or even some toasted pumpkin seeds or chopped almonds to mix up the crunchy textures and some extra healthy fats! Boom! You could add anything really! It's so damn flexible.

As much as this dish is amazing serves warm, it's also great with leftovers the next day. It's a great lunch on the go or quick dinner. Plus if you want it warm again you can easily reheat it and pair it with anything you fancy!

- 1 cup of dry quinoa 
- 10 chopped baby plum tomatoes 
- Half a large cucumber 
- Juice of a lemon
- 1 tbsp tahini 
- Fresh coriander
- Pinch of salt & black pepper

Start by making your quinoa, place one cup of dried quinoa with 2 cups of water into a sauce pan. Squeeze in half the juice of a lemon and pinch of salt. Bring to a boil then place the lid on the pan and reduce to a simmer. Allow this to cook for 12 - 15 minutes or until all the water has been soaked. Make sure the quinoa doesn't stick to the bottom of the pan! 

While the quinoa cooks, start chopping your tomatoes into quarters and your cucumber into slices and then quarters. Roughly chop your coriander use as little or as much as you want here. Place this all to one side. 

Once your quinoa is cooked place it in a large bowl. Then stir in your chopped tomatoes, cucumber, coriander, tahini and an extra squeeze of lemon. Mix this together until fully combined. Serve on it's own or perfect with hummus and roasted chickpeas!
