Lemon Matcha Chia Pudding

HAPPY NEW YEAR MY LIL CHICKPEAS! Here's to another fabulous year! I hope you're all feeling positive, happy and full of motivation. I thought I'd kick off the year with a recipe (surprise surprise) Trust me there are going to be some exciting bits and bobs coming your way! So here's the deal...

Ever Monday & Friday you'll get a brand new spanking Healthy, Plant based recipe (perfect for anyone on the old Veganuary), every Wednesday will be some kind of inspire me/advice post, and Saturdays or Sundays will be for fitness/lifestyle/workouts!!! I'm actually organised... can we believe it... Haha. Anyway moving onto the recipe....

I love Matcha and I love Chia pudding. So yep wasn't it kinda obvious I was going to combine the two? I'm kinda a lil bit in love with Matcha powder. It's like the nutritional, powerhouse of all teas. The benefits are endless. Plus, it gives me the biggest boost and spring in my step that I don't need the morning coffee fix.. bonus! I mean I love my coffee but even I'd pick a big creamy Matcha latte over my morning coffee any day. PLUS it makes your cup the brightest of green.

Since incopourating Matcha into my diet, usually before workouts I'e found my energy and endurance levels have been improved so so much!!! And not in a jittery way high caffeinated coffee soemtimes does, but a complete calming energy. Along with increasing metabolism and helping my overall health. So yeah I've been a lil addicted to the old Matcha latte.

Matcha has a sweet, earth tea flavour and if whisked and mixed with milk/water creates the most comforting, super power green tea (YES this stuff is the equivalent of 10 green teas!!) It's high in Vitamin C, packed with antioxidants and the amino acid L-Theanine which is what calm and brings the body energy without the added caffeine crash.

I was literally over the moon when my nana very kindly treated me to some Matcha powder from the company PureChimp! It came lovely packaged with 3 types of Matcha: The original Matcha, lemon Matcha & mint Matcha.

I've been going crazy on the old Matcha Lattes I have to admit. Butttt I wanted to switch it up a bit and that's where the flavoured ones inspired me. Adding it to my Chia Pudding! Another crazy obsession of mine. Which is basically a combination of Chia seeds and liquid which cause the Chia seeds to expand and make a thick pudding like consistency. It's a quick fibre, protein filled grab-n-go breakfast you can easily make the night before. You can of course mix these up with any flavours and toppings you fancy, add some protein powder, cacao, yogurts, frozen berries, granola,  peanut butter! The list is endless!

BUT adding the Lemon Matcha powder to my Chia pudding. Oh bloody hell... genius! It's sooo damn good. I've been loving it with some frozen bluberries stirred in which melt and add extra sweetness and texture! But like I said you can go craaazzzyyy with the toppings of your choice! I'm thinking adding a chocolate granola next..... Oh yes!

 I'm not even joking when I say I've been having it for breakfast every morning ever since I first made it!!! It's the perfect energising breakfast or snack to give you a boost and keep you satisfied!

Trust me it ain't as weird as it sounds...I promise!

3 tbsp chia seeds
1 cup plant based milk (almond or coconut are my favourites!)
1/2 tsp PureChimp Lemon Green Tea Matcha 
1 tsp agave syrup (optional to sweeten)
Toppings of choice

In a small jar or bowl mix all of the following ingredients until fully combined.
Cover and place in the fridge for 2-3 hours or ideally overnight. When ready to eat top with whatever you fancy, fruit, granola or other toppings. Enjoy!
