Orange & Cranberry Christmas Cookies

Cookies are always an essential food group. I've always loved cookies at Christmas. As a kid I think I enjoyed cracking open the Christmas biscuit tin more than the chocolates. Shortbread and creamy chocolate ones were always a winner!

As I've got older, I've grown to love traditional Christmas flavours, scents and spices. Of course I wanted to get my lil baking head on and make up the most Christmassy cookie I could. I wanted it to be soft, yet crisp, sweet yet spiced and bursting with that Christmas joy. And oh boy, I did just that... with these vegan, gluten free Orange & Cranberry Christmas cookies!

Orange & cranberry the ultimate festive flavours, right? They'r soft and crisp, combined with ground almonds, oats and buckwheat flour to make them gluten free and extremely hearty, I've used coconut oil rather than butter, added almond butter for a nutty, healthy fat, agave syrup for the sweetener, a little cinnamon and just the right amount of fresh orange juice to travel it's way through.  I also stirred through the cranberries which add sweetness as well as wonderful textures.

They're a complete melt in your mouth delight. Mhhhmm!

My whole family are actually obsessed with these, as well as myself, I've been making batches and batches already! Plus the amazing scents and smells that travel through your house just spell Christmas there and then. It feels exactly like home should feel. You'd be a fool not to make them!

They're the perfect festive treat to serve at dinner parties, the night before Christmas treat with a cheeky hot chocolate or even a family gift (trust me even your Nana will like them!)  I swear I'll be making plenty more for everyone I know, haha!

I also want to try mixing them up a little, I'm thinking a chocolate version or maybe some added pistachios... Oh now were talking!

Anyway, enough of  me going on about the amazingness of these cookies, lets get baking!

- 1 cup ground almonds 
- 1 cup buckwheat flour
- 1/2 cup oat flour
- 1/3 cup dried cranberries 
- 3 tbsp agave/maple syrup 
- 1/2 juice fresh orange 
- Zest of half an orange
- 1 tbsp almond butter
- 2 tbsp coconut oil
- 2 tbsp Almond milk
- 1/2 tsp cinnamon
- Pinch of salt

Pre-heat your oven to 180c and line a tray with baking paper.

In a large mixing bowl place all of the following ingredients, except the milk and mixing well together until fully combined. Gradually add your milk until a thick dough forms, you may need little or less. Make sure your dried cranberries are fully distributed.

Take some of the dough in your hands and make into cookie shapes. Then place these one by one on your baking tray. It should roughly make around 6 cookies.

Bake the cookies for 10 - 12 minutes making sure they don't burn at the edges. Remove them from the oven and allow to cool completely.
